James Kitchen – Winter Melon Meatball Soup

I’m very glad to be the first guest to share my recipe in James’ Kitchen. I would like to introduce you to a warm, calming soup that has many health benefits and is perfect for Winter.

Winter melon, or wax gourd, is a vegetable used in many types of Asian cookings. Winter melon is known for its ability to last through the Winter season, and for its neutral, mild, and detoxifying properties in herbal medicine and food therapy. Winter melon is often used in recipes that are recommended to people with certain chronic disease, and it is available in most Asian grocery stores and markets.

This recipe is suitable for people on a low carb, low sodium, or low fat diet.

Estimate Time: 30 – 45 minutes

Ingredients:

  • Winter Melon – 250 grams
  • Ground Pork (Lean) – 150 grams
  • Egg White – 1 whole egg white
  • Green Onion – half stick
  • Ginger Root – a small chunk
  • Garlic – 1 clove
  • Soy Sauce – 1/2 tbsp.
  • Hoisin Sauce – 2 tsp.
  • Salt
  • Five Spice Powder – a pinch
  • Corn Starch – 1/2 tbsp.
  • Sesame Oil – 1/4 tsp.
  • Ground Black Pepper – a pinch

Steps:

Measure 150 grams of pork meat in a mixing bowl (try ground chicken or turkey for leaner options)
Prepare other ingredients – garlic and ginger
Finely dice garlic and ginger
Prepare diced green onions – a generous portion if you like the flavor tip: if you use green onion regularly, pre-cutting them and store in freezer is a quick and easy way to save some time and hassle
Mix corn starch, hoisin sauce, salt, five spice powder, finely diced ginger root, garlic clove and green onion, egg white and soy sauce together in the mixing bowl
Stir vigorously in one direction to reach a consistency until it’s difficult to stir
Scoop out melon balls
Weigh out 250 grams of melon balls, set aside
Use a food safe glove to squeeze meatballs
Add meatballs directly into pot with boiling water
Add Winter melon balls
Cook for 5 minutes
Add sesame oil, ground black pepper and salt to taste
Garnish with green onion
